... they should have _some_ journey between the Shire and Bree where the Hobbits talk to eachother, and Frodo lets Pippin and Merry in on what is happening, and allowing them to formally join with Frodo and Sam and not just "hang on."

I think some of that can be assumed to have happened offscreen. The movie was long enough that we didn't need a recap of all that had happened - that would add unnecessary length to the film. And essentially, a scene where Frodo tells Merry and Pippin what is going on would amount to an unnecessary recap.
