Subject: Recipe Ideas

I'm planning an all-day scrapbooking event that includes lunch. I'm serving taco salad, but I need some suggestions to go with it. I considered a soup too. I want to make the tortilla shells, but I don't want to spend $15 on the fluted tortilla pans, so I think I'm going with the smaller shells and putting them in my muffin tins. Any suggestions for menu ideas?

[> Lis, it may be faster to fry the tortillas lightly in a skillet, then stick a soup can in the middle-that will give them a fluted shape, too. As for food, how about maybe some ceviche (there are plenty of good packaged ones) and tortilla chips or a burrito bar? If you're sticking with Mexican, that is. There is even a recipe for using taco seasoning mix in a chex snack mix. It sounds good. Maybe instead of soup you could do a salad.
