Lis, it may be faster to fry the tortillas lightly in a skillet, then stick a soup can in the middle-that will give them a fluted shape, too. As for food, how about maybe some ceviche (there are plenty of good packaged ones) and tortilla chips or a burrito bar? If you're sticking with Mexican, that is.
