so, after my initial weightloss of 10 lbs, I tumbled off the wagon for a few weeks. It wasn't a terrible tumble, but I definetly made bad choices a bit too often, and I'm sure about 2-3 of those 10 lbs snuck back on. (I didn't weigh myself as often b/c I was afraid of this fate!) Anyway, I've been doing very well the past 1 and 1/2 - 2 weeks, and I stepped on the scale yesterday. Dun dun duuuuunnnn...my total weightloss is now 13 lbs!! That is such a strong motivator for me, actually seeing the results. So, at this point I'd say I have another 7-10 pounds to lose. I really really feel like I can do it. I actually wore shorts the other day to a party with my boyfriend (I HATE wearing shorts b/c I am really self concious about my legs) and I felt okay about it!! I did very little of that tugging and adjusting that usually happens when I wear shorts. So, overall, I feel pretty good.

And, it's fun to try and find new "treats" that are exciting and appealing but also healthy! My newest find is organic polenta. I particularly like the sundried tomato and garlic variety. It's no fat and only 80 calories per serving. I spray a griddle pan with olive oil spray and fry the slices (not too thick) until they are slightly golden brown and a little crispy. It takes a little longer than I imagined to get them to the crispy stage, but it just takes patience. When the slices are ready to be flipped, the side facing up should turn a deeper golden color. I serve it with some crushed tomatoes and a little low calorie mozerella on top. It's so delicious. My boyfriend loved it, too. can also bake the polenta slices or put them in the microwave, but I don't really know how good the microwaving option would be. In my grocery store, I find the polenta in the produce section, along with the tofu, soy bacon, etc. So, along with my sesame ginger salad dressing, it's my new favorite thing!!!
