Isn't hollandaise sauce the best? Grate with eggs, Canadian bacon and English muffin; equally grate with asparagus.

Another sauce I love is remoulade. It's kind of a semi-spicy, mayonnaise-based sauce that is superb with crab cakes. I tried it when I was in New Orleans, and now I'm a true believer. ('Course, it doesn't take much.)

And bearnaise sauce. Yes, bearnaise sauce is excellent as well, especially with a nicely done London broil. And then there's just good old-fashioned gravy. Chicken, beef or turkey -- I ain't fussy; they're all delicious. Sometimes, the best thing in the world is a simple open-faced roast beef sandwich on rye, just swimming in gravy. (And that's another thing diners do pretty well, by the way.)

With all this talk about food...if you stuck my finger with a needle right now, I'll bet marinara sauce would come out!
