Hi Darren:
Having gone to Jack Daniel's for the last 6 years I found that most of the top teams cook brisket for about 18 hours
give or take an hour. Some will cook for 10 hours then foil it over night and finish it the day of the competition.
I have cooked them about 3 times now and all 3 times were about 15 to 18 hours and I thought they were all good, BUT the 18 hours was the best.
As long as you are happy thats all that counts unless your in competition.
