No third degree. It was just curiosity on my part. Clove I heard about and you're right. The Montreal steak spice you got will do just fine. At home they're just called "Steak Spice" LOL

I live downtown, China, near the old Forum and I don't go out much to the suburbs but you're right: Lester's makes a very decent smoke meat. As a matter of fact there's a new smoked meat joint that opened on the 20 in Vaudreuil called Smoked Meat Pete or something. There was an article in the Gazette about them. Pretty good smoked meat there also. I talked to the owner who gets his meat from , you guessed it, Lester's but he has one of the best fries in town.

BTW, next time I do smoked meat I'll try at 350 and the secret is in cutting it otherwise it's tough. You have to start with the knob.
