Oh, I had meant to ask a couple of questions.
1. About the rub, are you certain there are no cloves in it? I seem to remember big hunks of meat studded with whole cloves...but that may not have been smoked meat.
2. I have here a bottle of "Montreal Steak Seasoning", made by McCormick and sold in all the supermarkets here. Of course I had never heard of it at home. It says it contains salt, spices (including black pepper, dill seed, coriander seed and red pepper), garlic, partially hydrogenated soybean oil, and extractives of dill and paprika. Is this stuff suitable for use as the rub?

Ron, where do you live? Do you know the Marché de l'Ouest just off Sources? There is a little lunch counter in there, kind of near the middle and next to a Chinese food place, that serves nothing but smoked meat, french fries and coleslaw. They use Lester's meat and in my EXTREMELY humble opinion it's the best smoked meat sandwich in the West Island. They cut it very thin, which makes all the difference...compared to them Chenoy's on St John's is a travesty. Again, IMHO :-)
