I know what you mean, but I think that sometimes Artists are not happy with some of the recordings they made in the pass and think of ways they could have made them better, so when they perform a song they think they can 'improve' on it, which is not perhaps what some fans want to hear.
What you perhaps should take into consideration is that a singer is not a walking Jukebox, he or she is an Artist, and he or she is constantly seeking perfection to give their fans their 'best'.
