Subject: Recipe: Layered Strawberry Dessert

I have to laugh at myself. I said in my last post that the Strawberry Cheesecake recipe has been in my recipe box over 30 minutes, instead of YEARS. This recipe is easier, since the Cheesecake layer does not have to be baked. I think I like it better. I like the crust better than the graham cracker one. It has been renamed, Layered Strawberry Dessert. I didn't know what to call it.

Layered Strawberry Dessert

Crust:
1/2 cup cold butter or margarine
1 cup all-purpose flour
3/4 cup chopped pecans, divided

2nd Layer:
1 pkg. (8 oz.) cream cheese, softened
1 cup confectioners' sugar
1 carton (8 oz.) frozen whipped topping, thawed, divided

3rd Layer:
1 small pkg. Strawberry Jello
1 cup boiling water
1 pkg. (10 oz.) strawberries, thawed

Top Layer,:
Rest of the divided whipped topping, and rest of pecans.

In a bowl, cut the butter into the flour until crumbly; stir in 1/2 cup pecans. Press into an ungreased 13x9x2-in. baking pan. (I used glass, so I could see the different layers)
Bake at 350 degrees for 20 minutes or until lightly browned. Cool.
In a mixing bowl, beat cream cheese and confectiners' sugar until fluffy. Fold in 1 cup of whipped topping.

Dissolve strawberry jello in 1 cup of boiling water, and add strawberries. Pour over the cream cheese layer. After the gelatin is set, spread remaining topping over the top. Sprinkle with remaining chopped pecans.

Since I've been having so many problems with my recipes, I should follow this advice. Above tags made made by my oldest DD, Karla. She also made me a lovely one, I can use on Mother's Day.
