Heather’s Southwestern Chicken Medley

I may need to tweak it a bit next time I make it. (This will be soon.) But this is what I can remember.

Main Ingredients
4 chicken breasts (thawed) 2 tbls olive oil
¼ c. red onions (sliced) ¼ c. zucchini (sliced)
¼ C. red bell peppers (sliced) ¼ c. green bell peppers (sliced)
¼ c. carrots (shredded) ¼ c. broccoli (chopped)
4 slices of Havarti Cheese

Southwestern Spice Creation
1 tbls brown sugar 1 tbls chipotle pepper
1 tbls garlic powder 1 tbls onion pepper
1 tbls paprika

Instructions:
1. Chop, slice and shred vegetables before any cooking occurs.
In a separate bowl, blend the ingredients for the spice creation. Set aside.
2. In a large pan, heat up olive oil. Once olive oil is heated, add chicken breasts and spice creation.
3. Preheat oven to 350*. Spray 9x13 inch pan with cooking spray.
4. Once chicken is browned in pan, remove chicken and place in 9x13 inch pan (for oven purposes). Add one slice of Havarti Cheese per chicken breast. Place in oven until cheese is baked to brown.
5. Add Veggie Medley to large pan that still consists of olive oil and spices. Stir frequently until veggies have a crisp.

(Judy, here's the recipe I promised. If you want a hard copy, let me know via email and I will send it to you. Everyone else can take a shot at this. It's a rough draft, but hey! I'll tweak it when I make it later this week).
