It is plausible that the leaking head gasket could increase fuel consumption because that cylinder would not be combusting properly. Or, you could have another issue increasing the fuel usage. However, you'll need to get the gasket replaced before you have a chance to figure that one out.
As far as replacing the head gasket, the job is tedious, but not difficult. You'll need to be comfortable around engines, but most everything is accessible and you shouldn't need any special tools. I don't think you can "let it go" it will get worse quickly. I think you might get by with just the gasket replacement, but depending on the condition, you may want to replace the timing belt while you're there. At 200K+ miles, I'd propose that you don't need to rebuild the head unless you really plan on keeping it a long time. If you find the head is in bad shape, you could probably get a rebuilt cheap, or find one in good condition at a salvage yard. I've replaced gaskets with and without doing head work. In your case, I'd suggest not putting too much money into it, and as long as the head and block surface looks pretty good (no erosion, cracks, or gouges), you should be able to replace just the gasket (use Honda if the cost difference with aftermarket is reasonable.....cause?
