Honestly, do those inconsistencies bother you when you watch the programs? I agree perhaps some of the producers could have paid better attention to the details, (maybe they didn't dream there would be such a following) but for me, it matters little because each episode is a new journey, a new gift to open, regardless of how many times I watch it. Grandpa could have a dozen birthdays but he'd still be the same Ole Zeb. Not wishing to sound critical, but the inconsistencies are of little importance to me personally. I realize everyone doesn't feel the same (Obviously) Keep in mind though, the SHOWS are mostly fiction, even if the basis for it is non-fiction. :)
