I've always thought it was at least in part, a sort of collective guilt over Brian. He died so soon after they'd booted him out of the band, with so much left unsaid or not done.

It's easier to not talk about him or to whitewash him out of the history of The Stones than to acknowledge they may have done things they shouldn't have or that they owe a great debt to Brian. Plus I suppose they may be worried that some of Brian's relatives or kids may try and lay a bigger claim to the Rolling Stones profits, if they acknowledge Brian's role in the band.

I have always felt that Brian was the special ingredient to The Stones, and that once he'd left, although there are some really great songs post-Brian, they were never quite a good overall as they were with him. I think Brian just brought that special thing to the songs which lifted them out of being just another rock and roll tune and into something more. (Brian's Dulcimer on Lady Jane, for example).
