Subject: Please share your favorite soup recipe!!!

It has gotten really cold here in OK in the last few days, so I think we need to start sharing soup recipes. Got any to share?
Thanks!
Patty

Patty - think I would add cornbread to go with that soup. I am embarrassed to say, I use Bear Creek Soups when I make soup - LOVE Vegetable Beef with browned ground beef added, Tortilla Soup with chicken added, Cheddar Broccoli with extra broccoli added, Clam Chowder, and my all time favorite Dang Good Chili. I know they have lots of sodium but I love them and won't make my own when these turn out as good...

HI
Where do you buy Bear Creek soup mix?
Patty the soup you showed sounds good.
I have made Veg. soup, Potato soup and Oyster stew these cold days.
Oyster stew
I use a 8 oz. can of Ck of sea Oysters with the liquid with a little butter bring to a boil to curl the oysters( my Mom would say??) then I add the amount of milk for two bowls and just let it warm, don't let it boil.
Potato soup
I peel and cut four pot. into pieces along with a little onion cut up, put in salted water to boil until pot.'s are tender, then drain the pot.'s add a little butter, salt and pepper a couple bowls of milk, heat do not let the milk come to a boil! makes two nice bowls.

I make cornbread EVERY time I make this 5 Can Chili, Bonnie!!! Gotta have it with soup! I made this tonight with cornbread and got to thinking about hot soup since it's so cold outside.
No need to be embarrassed about using the pouch mixes, Bonnie. We ALL can use the little extra time that mixes save us. I've never made the Bear Creek pouch soups, but I have seen them in the stores. I know I've seen them in Wal-Mart and Big Lots here. I believe they are in a green pouch and are a dry mix that you add water or broth and extras to, like the chicken or ground beef. I have seen the potato soup and potato soup is one of my very favorite soups, so that will probably be one of the 1st I try. My cousin told me that she uses it.
I've never had oysters, Darlene. That potato soup sounds really easy, too. Will have to try it.
Thanks! Keep 'em comin'!!!
Patty

The pouch soups really are the best... I believe Bear Creek is from Utah - I made the chili once and swore never to make home made again - EVERYONE wanted the recipe - I use the cornbread broken up under my soups - make more of a stew.... Yummmm...

Hi Patty~

Here's a favorite that I make quite often. This makes a large potfull. I like to have some nice Italian Bread for dipping...very filling and so easy to make.

Pasta e Fagioli

Begin: 1/4 Cup Olive Oil
3-4 Cloves Garlic diced
1 Onion diced
Add: 29oz can Tomato Sauce
Plus: 1 can Water
19 Oz can Cannelini Beans
15 oz can Diced Tomatoes
15 oz can Chicken Broth
1 Cup Ditalini Pasta
Add: 1 tsp Bl. Pepper, Parsley, Oregano, Basil, Thyme & Bay Leaf.

Saute the 1st three ingredients in Large Pot. Cook 3-5 minutes until translucent.
Add rest of ingredients and: Boil for 15 to 20 minutes.
Very Good!

I hope you'll give it a try...you won't be disappointed.

Hugs~ Joann

P.S.: Now that I hear how good the Bear Creek Soup Mix is I'll have to try, as I seen them at the Shop Rite in the produce area on a spinner rack. (On next weeks grocery list.)

I live alone and have for 25 years and just stopped making the homemade and started buying the Bear Creek I love it and no matter what kind I make I always make cornbread. That cheesy potatoe is out of this world. It makes a large pot but I have some half gallon jars my grandmother gave me and just pour the left over in them an put in the frig and I have soup for 2 or 3 days, depends on how large a pig I am.

Darlene,
Walmart sells Bear Creek soup. I make it often. Like Bonnie said, it's good so why go thru all the trouble for home-made when there's Bear Creek?

I love the cream of wild rice Bear Creek. I add left over chicken to it. We even sold this at a quilt guild luncheon and everyone wanted the recipe and they came back the next day for the rest. Had to make a lot of packages. :)

I saw this one on the Internet and have made it several times. It is delicious and yes, it does make a BIG difference if you use O'Brien potatoes vs plain hashbrowns. I have used the plain and added onions, etc, but just not as good. The one change I like is to use one pkg only of the gravy as I like a thinner consistency.

1 pkg of 0'Brien hashbrowns potatoes
2 boxes of chicken broth
2 pkg of instant country gravy
1 cup water

Simmer potatoes in the broth until done. Then, stir gravy mix into the cup of water until well mixed. Mix gravy slowly into the potatoes, stirring constantly. Simmer until the consistency you like best. Enjoy.

Southern Indiana had around 4 inches of Snow today, so I made the Bear Creek Broc. Cheese Soup, it was really good, but makes a lot for two people, so for supper I made Broc. and cheese Baked Pot.'s.
Thanks Everyone!

Annie B.
Question, we don't have O'Brien hashbrown potatoes here.
Can you tell me what they have in them that plain potatoes don't? Thanks.

CJL, I looked up an image search for "potatoes O'Brien" and looks like Ore-Ida and some other brands have them...there may even be some store brands of them. The pkg said "with onions and peppers" and it looked like red and green peppers and onions. I thought it was a brand name at first, but it's a type of hash browns. Will have to try them!

Thanks for the response. I plan to make some soup after Thanksgiving. This will be easy. I figure we will need something simple after turkey!!

Thanks, Grandma Bonnie, for alerting me to Bear Creek Soup Mixes. I was at Walmart earlier this week and found it; tried the Cheddar Broccoli tonight and found it to be excellent. Makes a ton, too. I shared generously w/a neighbor, then still had about 4 servings for the freezer even after having eaten my fill. I threw a fistful of shredded rotisserie chicken that I had in my freezer and seasoned it lightly w/Paula Deen's basic seasoning mix. It's raining cats, dogs and maybe a squirrel or two here in N TX tonight, making it a perfect evening for soup.

Lulu... The Cheddar Broccoli is my personal favorite - I just chop up more broccoli... All in all, they all taker less than 30 min from start to finish and so good - I will add rolls, garlic bread or corn bread and you have a meal!
