THere are things people can look at and see growth - but most of Xander's growth post-HS, inasmuch as it was part of the overall BtVS storyline... happens through exposition rather than onscreen events. Example: We're told Xander in The Replacement that is good at his job, when suave Xander gets the promotion and new apartment, but it's not something we saw him grow into. We didn't really see him failing at his prior jobs either - that was mostly exposition too.

Xander was both a brave man, and also a man who could be sanctimonious and hypocritcal. And these were baseline traits that, while we knew about them, and came into play in later seasons... weren't really explored or developed. Why's he so brave or so hypocritical and what's the significance to him and the story. What do we build from that. These are not questions the show looked at.

Indicating that it simply wasn't an important point - or at least, not important enough for the writers to go into onscreen.
