I really like the piece, and wonder why I've never heard it before.

You're not the only one who'd never heard it before. Nobody on Keno's board had heard this one, and there are some real die-hard bootleg collectors on there.

It depends on where and how it was recorded.

According to Martin Elliott's "Complete Recording Sessions 1962-2002", it was recorded at Chess Studio on November 8, 1964. This is Elliott's write-up about the song. Doesn't say much:

The band played a short second United States nine date tour with the Shangri-Las. The return to Chicago prompted another Chess session with Ron Malo on the 8 November. This session was not quite as fulfilling as the last time. Following the session, Brian Jones became ill and missed four tour dates due to severe respiratory and exhaustion problems. It is rumoured that on "Key to the Highway", Howlin' Wolf played along.

(I suppose the Wolf-man got tired of staring at Muddy painting the ceiling and decided to go play a little music instead...)

The November 8 session also produced Goodbye Girl (an excellent little song written by Bill Wyman), What a Shame, Time Is on My Side (the so-called "guitar version"), and Mercy Mercy. Seems to me that for a session that was "not very productive", they managed to come up with some pretty good songs. Five songs in a single day! Nowadays it can take weeks to come up with just one, but I digress...
