It's been a lot of years since I made this and I had no recipe. I just shredded cheddar cheese into a large bowl, added a can of chopped pimentos, added enough canned cream of tomato soup to make a good spreadable consistency. Just before making the sandwiches, I shredded hardboiled eggs into the mixture. I don't recall, but I probably added some seasonings to taste. It keeps well when refrigerated. We loved it and my father-in-law expected me to have a bowl ready every time they visited.
My taste test for this concoction was "store-bought" spread and I thought mine was better.

Thanks Lulu,
I never heard of it made that way, when I googled there were so many different types, I think my Mom just used the cheese, pickles or relish,Kraft Salad dressing, maybe a little suger with a little Pimento, I just can't decide what cheese it was.
Thanks again for sharing !
