Subject: OT Sharing Pasta Salad Recipes

Pasta Salad
16 Oz. Kraft Zesty Italian Dressing(says Anything)
For only Two of us I use 8 oz. of the Dressing!
Dice Tom.'s. Cucumbers, Onions, Gr. Pepper, Bacon bits, Shred. Cheese, sprinkle of white sugar, sprinkle of Parmesan Cheese. Few Bacon bits, salt and pepper to taste.
1 Pkg. or a half pkg.Tri Color Rotini Pasta, cook until tender as directed on the pkg. Drain.
Add the Dressing and all of the diced items.listed above, with the salt and pepper.
You Can eat this warm or cover and Refrig, keeps well in the Refrig.

Sweet And Sour Pasta Salad
Recipe calls for 2 (8 Oz ) Pkg. curly Macaroni, (I like Bow tie shape)cooked and cooled
2 Carrots grated, (I buy shred. carrots)
1 Gr. Pepper, diced
1 Lg. Onion, diced
1/2 C. Celery diced
Salt and Pepper to Taste
2 C. Mayonnaise
1 Can Eagle Brand Milk
1/2 C. White vinegar
1 C. White Sugar
Mix and Chill several hours.

Shrimp salad
From: Dorothy Jasperson
1 can deveined shrimp, drained
small shell pasta
diced tomatoes
sliced green onions
Miracle Whip
Cook pasta; drain. Mix other ingred. with Miracle Whip to moisten.

Here's a couple more, that are not pasta but still family faves.

Betty’s Confetti Salad
4 c. cooked & cooled rice
1 Tab. green onions
2 c. (chicken, tuna, crab, shrimp, turkey)
S&P to taste
1 c. diced celery
1 c. diced green pepper
1 c. grated carrots
1 ½-2 c. mayo

Layered Salad
From: Narda Jacobsen
(This was one of our family's favorites for years.)
1 head of lettuce, shredded
1, 10-oz. pkg. Frozen peas
½ c. bacon bits
4 oz. grated cheese
4 boiled eggs
1 small onion, diced
2 c. mayonnaise
Optional: Avocado, mushroom, sprouts, grated carrots, cucumbers, black olives, celery, etc.
In a shall dish, layer in the following order:
Cover the salad completely with mayo & let set for 8-10 hrs. in the fridge before serving.

Dressing for layered salad
8 oz. cream cheese. Softened
1 c. mayo
1 c. sour cream
1 tsp. dried ground basil leaves
½ tsp. garlic
½ tsp. onion pdr.

Ham and Cheese Fettucine Salad
Recipe from Pillsbury
1 ( 8 oz.) package of spinach fettucine noodles or regular fettucine if you have hard time finding the spinach kind
2 cups sliced ham, salami or pepperoni ( cut into strips) ( I like to use the mini pepperoni that is available now in stores)
4 ounces of sliced provolone cheese, cut into strips
½ of a red bell pepper, cut into strips
½ of a yellow bell pepper, cut into strips
1 ( 2 ½ oz.) can sliced ripe olives, drained
½ cup mayonnaise or salad dressing
3 tbsp grated parmesan cheese
1-2 tbsp milk
1 tbsp lemon juice
1 ½ tsp chopped fresh marjoram leaves or ½ tsp dried marjoram leaves
Cook noodles, drain. Combine all salad ingredients. Mix dressing and pour over salad ingredients. Refrigerate 2-3 hours to blend flavors before serving.

Pasta Salad

1 cucumber diced small
2 tomatoes diced small
1 green pepper diced small
1 package vermicelli
boiling water
1 ( 2.75 oz.) McCormick Salad Supreme
1 ( 8 oz.) Kraft Zesty Italian dressing
Bring water to a boil. Remove from heat source. Break vermicelli into pieces and drop into the water. Cover and let stand for 20 minutes. Drain and rinse in cold water. Add the rest of the ingredients. Refrigerate until ready to serve.

Rice Salad

2 cups cooked rice
1 can corn, drained
1 green bell pepper, chopped
1 red bell pepper, chopped
1 onion, chopped
1 can ripe sliced olives, drained
1 can black beans, drained
1 ½ cups salsa
½ tsp cumin
chopped parsley or cilantro as desired
Serve chilled. Or warm and put on a tortilla with strips of cooked chicken, turkey or steak for a wonderful burrito.

Strawberry Orange Pasta Salad

2 cups bowtie pasta, cooked according to package directions
1/3 cup poppy seed dressing
¼ cup mayonnaise
¼ cup sliced green onion
1 can ( 11 oz ) drained mandarin oranges
1 cup sliced strawberries

Mix all and refrigerate until ready to serve.

Wild Rice Salad

4 cups cooked wild rice
1 can ( 8 ounces ) sliced water chestnuts, drained and chopped
½ cup thinly sliced celery
½ cup chopped green pepper
½ cup frozen peas, thawed
½ cup dried cranberries
¼ cup thinly sliced green onions
¼ cup minced fresh parsley
1/3 cup cranberry juice
1/3 cup vinegar
2 tablespoons olive or vegetable oil
¾ teaspoon dried basil
¾ cup sugar
¾ teaspoon salt
¼ teaspoon pepper
½ cup chopped pecans, optional
Combine all ingredients and refrigerate for a few hours or overnight before serving to blend flavors.

Hi Darlene~

I'm enjoying all the recipes that have been posted..and now will be able to make and take one to our daughter's 4th of July BBQ.

I'm tending to like the suggested one from Jazz for "Betty's Confetti Salad"...(using Shrimp,)

Sorry I can't be of help..since I usually make the Betty Crocker "Ranch" Suddenly Salad.
