Ham and Cheese Fettucine Salad
Recipe from Pillsbury
1 ( 8 oz.) package of spinach fettucine noodles or regular fettucine if you have hard time finding the spinach kind
2 cups sliced ham, salami or pepperoni ( cut into strips) ( I like to use the mini pepperoni that is available now in stores)
4 ounces of sliced provolone cheese, cut into strips
½ of a red bell pepper, cut into strips
½ of a yellow bell pepper, cut into strips
1 ( 2 ½ oz.) can sliced ripe olives, drained
Dressing:
½ cup mayonnaise or salad dressing
3 tbsp grated parmesan cheese
1-2 tbsp milk
1 tbsp lemon juice
1 ½ tsp chopped fresh marjoram leaves or ½ tsp dried marjoram leaves
Cook noodles, drain. Combine all salad ingredients. Mix dressing and pour over salad ingredients. Refrigerate 2-3 hours to blend flavors before serving.

Pasta Salad

1 cucumber diced small
2 tomatoes diced small
1 green pepper diced small
1 package vermicelli
boiling water
1 ( 2.75 oz.) McCormick Salad Supreme
1 ( 8 oz.) Kraft Zesty Italian dressing
Bring water to a boil. Remove from heat source. Break vermicelli into pieces and drop into the water. Cover and let stand for 20 minutes. Drain and rinse in cold water. Add the rest of the ingredients. Refrigerate until ready to serve.


Rice Salad

2 cups cooked rice
1 can corn, drained
1 green bell pepper, chopped
1 red bell pepper, chopped
1 onion, chopped
1 can ripe sliced olives, drained
1 can black beans, drained
1 ½ cups salsa
½ tsp cumin
chopped parsley or cilantro as desired
Serve chilled. Or warm and put on a tortilla with strips of cooked chicken, turkey or steak for a wonderful burrito.



Strawberry Orange Pasta Salad


2 cups bowtie pasta, cooked according to package directions
1/3 cup poppy seed dressing
¼ cup mayonnaise
¼ cup sliced green onion
1 can ( 11 oz ) drained mandarin oranges
1 cup sliced strawberries

Mix all and refrigerate until ready to serve.


Wild Rice Salad

4 cups cooked wild rice
1 can ( 8 ounces ) sliced water chestnuts, drained and chopped
½ cup thinly sliced celery
½ cup chopped green pepper
½ cup frozen peas, thawed
½ cup dried cranberries
¼ cup thinly sliced green onions
¼ cup minced fresh parsley
1/3 cup cranberry juice
1/3 cup vinegar
2 tablespoons olive or vegetable oil
¾ teaspoon dried basil
¾ cup sugar
¾ teaspoon salt
¼ teaspoon pepper
½ cup chopped pecans, optional
Combine all ingredients and refrigerate for a few hours or overnight before serving to blend flavors.
