I agree that that if the Emperor just mentioned to me that "by the way, you do have kids, so I might've been a little off-base with that whole you killed Padme thing," I could see getting upset. But it's also been 20 years for this revelation to come out, so who knows what the Dark Side does to you over that amount of time. I'm sure learning this information has a significant effect and perhaps starts the "conflict within" that Luke senses. But when you're consumed with the Dark Side, you don't just immediately give your two weeks to the Emperor or take FMLA.

As for Leia knowing her mother, we do not know if she knows she is adopted. Perhaps Bail Organa's wife died when Leia was young and that is who she is referring to. Luke asks her if she remembers her "real" mother, but to her that may not seem such a strange question because she knows Luke is adopted. Or perhaps she does remember Padme, and it's a memory that is somehow Force-induced that has stuck with her. I don't know, I'm in the "she doesn't know she's adopted" camp. Given her history, I would be hesitant to tell her her true origins if I was Organa. Then again, if I wanted to keep her out of sight of the Empire, I would've never stuck her in the Galactic Senate.

In the Jedi Academy, Yoda is like the headmaster. He trains all the younglings initially until they reach a certain point at which time they are assigned a specific Master. So Yoda did educated Obi-Wan, "from a certain point of view." Let's not forget, this is the guy that told Luke that Vader killed his father. :p
