I would say Chromium Picolinate 200mcg 3x per day, One Centrum-type multi-vitamin, and Calcium.

The Chromium will help maintain normal blood sugar levels, the multi-vitamin will help supplement your diet and replace some vitamins you won't be getting, and the Calcium will supplement the foods that do not have much calcuim, since you won't be drinking milk, and cheese needs to be limited.

I personally also take supplements of magnesium to help with the problems that calcium can cause, and Omega-3, which helps retain the lean you already have on your body; it also has many other favorable health benefits that the docs always promote. Hope this helps you, and remember this is just MY opinion; get a check-up and consult your doctor first. =)
