Subject: Kel, here's a recipe, you could just leave the cheese out & maybe put in a little extra sausage or bacon & then take in baggies.
In reply to: Kel 's message, "Oops, I forgot to mention that I can't eat very much cheese. I'm one of those lactose intolerant people (pain in the butt I know lol). I mean I can have the small amount of cheese like on a taco, but I can't sit down and eat a hunk of cheese. Sucks huh?" on 14:09:47 09/19/02 Thu

1 pound Sausage (browned, crumbled, and drained)
4 eggs
1/2 cup heavy cream
1/4 cup Atkins Bake Mix or Soy Flour
1 Tsp Baking Powder
1 cup grated Cheddar Cheese
1 1/2 teaspoon sage

Beat together eggs, cream, baking powder, sage and bake mix. Stir in sausage and cheese.

Spray non-stick muffin cups with Pam. Divide batter evenly into 12 muffin cups.

Bake in preheated 350º oven for 20-25 minutes, they will brown slightly on top.
