It isn't easy for me to eat that much either. 2700 was what I figured I needed to eat too, I was managing about 2000, (for about three days). What I was doing was having a chicken leg and thigh for breakfast, (cooked on George Foreman Grill to cook it fast enough). And a large piece of cream cheese with some sugar free caramel syrup (Torani brand) mixed in.

Then meat and cheese for lunch or a tostada without beans or tortilla. Then a snack after work and then later dinner.

I agree it is a lot of food, on the weekends it is almost impossible to get myself to eat that much, which is why the weight came off, and then came back on so fast. I was forgetting to eat breakfast etc...
