Subject: Review of Perigrines at the AC Hilton

Here's another great restaurant (only 5 star in AC) to visit a few times ayear but not if you're on a fast food budget. Peregrines has 11 tables, most are surrounded by elegant booth seating and luxurious wood. Service is by 4 people, a captain, server, runner and bus persons. You are greeted like a king by Giovanni Mancini a true Maitre d'. YThe menu is extensive and expensive but with smart ordering you can have your cake and eat. You can order from the menu, specials or leave it up to Chef Anthony Spinella as we did.
Glasses were filled with imported mineral water, drink orders arrived promptly and a large assortment of breads from chocolate to crispy crust reached the table. Each of us were served a plate with a starter of a shrimp over a small diced salad of crabmeat. For a appetizer a large plate of jumbo lump crabmeat, oysters on the half shell, smoked salmon and bed of greens was served.
Soup was a delicious Creamed She Crab Bisque with Caviar. Salad was warm goat cheese cheesecake, goats milk cheese and frisse with champagne-dijon dressing. Intermezzo of ices.
We shared 3 entrees, Lobster quesadillas with vegetable salsa, North Atlantic salmon served with Morrocan barbeque spices, bruised cabbage and apples and chick pea fries, pan seared Buffalo tenderloin with wilted greens, gingered potatoes and carrots with demi-glace. All were succulent and perfect. Dessert was a mix of chocolate, ice cream, fresh fruit, raspberries, blueberries, forget about it!
And the constant attention by the staff of four servers, Giovanni and Anthony made it great time too be remembered. $274 for 4.
