Subject: RECIPE

I have no idea what to call this but it is a Mexican dish.
It is kinda like a Mexican chicken soup or stew.

Now, if any of y'all know me well... I'm not much of a "baker". I don't measure anything, just dump it in and see what happens...

Chicken tenders, cut in chunks
1 can of HOT chili beans
1 can diced tomatoes
1 jar Taco sauce, I used mild it was all we had
1/4 jar of HOT Pace salsa, and it is hot
onion
green pepper
jalapeno pepper
brown rice
salt
black pepper
red/black pepper
cumin
cilantro
chili powder


Brown off chicken, add all spices, to taste. Brown off onions and green peppers. NOTE... chicken and onions are way easier to cut up if still frozen.

Cook brown rice.

Dump all in a big pot and simmer until it's as done as you want it, or you get ready to eat... LOL!!!!!

If you don't like it hot, just substitute with mild.

We made soft tacos on Sunday, nachos on Monday, and I ate it like soup Monday night.

I'd bet it would be good as soup with a piece of that jalapeno cornbread with it.

Hillbilly, That sound sooooo good. I would have to back off on the HOT stuff a little. I love HOT stuff but Joe is a wuss when it comes to Hot food.

Sorry for not posting the last few days but Austin has had a nasty cold/virus and wanted me to just sit in the same room with him all day. Today, he was back at running around wide open..so he is feeling much better.

I added Tracy's recipe to our Recipe Page..I cook the very same way. I dont do much measuring unless Im baking.
