Subject: recipes

Recipes would be great and doing a cookbook for the RRF would be even better. Maybe the wives of the riders would contribute, too,--maybe even some of the cowboys can cook! I've been a Weight Watchers person since January, so I'm very interested in the lo-cal versions.
My husband and I have an advertising agency, so we could help with the design and copywriting.
Is anyone interested in heading up a breakfast, coffee, etc. for the chat line members going to Columbus in October? It sounds like several people will be there.

Mary Angel, you must have been reading our minds. Beckie and I were just talking about that yesterday. I think it would be a great idea. So, to all of you who visit our website please brainstorm and share any ideas you have with us. Beckie or I will get in touch with the folks at RRF and see what they have to say about it. : )

If anyone has some good diabetic recipes that actually taste good, would you please post them? My husband is diabetic and it seems like all the things I make for him are just about tasteless. Guess it's that 'no sugar' thing. Thank goodness for Splenda or he'd really be in trouble! The easier the recipe the better for me too-----

Gini, here's an easy yummy desert....

1 package of your favorite flavor of sugar-free Jell-O
1 package softened cream cheese


Prepare Jell-O as directed, mix in softened cream cheese until well blended, refrigerate until set-up. You can top it with nuts or sugar-free whipped topping and it is great. Almost has the consistancy of cheese cake.

If you make this let me know how you like it. As I stumble acrros more I'll be more than happy to share.
