In my experience, though this is with a 501 bilge keel, there is a lot of pressure on the blade when under power. anything off dead ahead puts a lot of prop wash onto the rudder blade and you need to keep a firm hand. Not as violent as you describe but then you have a different rudder to the one I had.

Where is the boat now? there are a number of 500s in Poole yacht club and a 501 so if you need a pattern I'm sure we can find you a boat to visit (assuming you are still nearby)

The 501 is my old boat, Securus, and she already has a new tiller, made by a mate of mine from laminated mahogany onto a pattern from the old tiller.

He might even have the jig somewhere.
