Clive, difficult to propose without knowing more of your likes and dislikes, geographical interests, etc.

I keep Beachcomber in Italy on the Adriatic side and spend my summers cruising southeast, direction Croatia and Greece and so I would personally aim for the Med if I was UK based. The breadth of variety from Spain, North Africa, Turkey, Greece, Croatia and Italy is more than anywhere else, in the world I would say, in such doable distances. And generally safe from some of the nastier elements of societies, I would add, if you avoid Albania and perhaps the extreme eastern part of the Med - although I have no experience to back that up.

Is the Trapper 500 up to the task? It's not the ideal, being a metre or two on the small size for storage, but you would be hard put to find a better at the size and price point. No reflection on you or your wife because I haven't a clue about you both, but I would ask, are you up to the task, rather than the boat? Because, properly prepared and provisioned, the boat will look after you well and provide you with a safe and secure home for the duration.

Best, Brian.
