Subject: Mock seafood salad (see recipe enclosed). I serve this for our picnics and everyone loves it. I like it cause it has a lot of minerals in it.

MOCK SEAFOOD SALAD
You will never guess that there is no seafood in this salad.

1 C raw parsnips shredded (17g carb)
1 Tablespoons lemon juice
1/2 cup sliced celery (2)
1/2 cup chopped walnuts (5)
3-4 hard cooked eggs, chopped (3)
grated onion (optional)
salt and white pepper to taste
Mayonnaise (3)

Wash and scrape the parsnips, shred them coarsely into a large bowl. Toss the shredded parsnips with the lemon juice. Add the sliced celery, chopped walnuts, chopped hardcooked eggs, grated onion and salt and pepper to taste. Add mayonnaise to moisten.


Serves 6
Dietary fiber deducted from total carb count (40)
carb grams per serving 5
