I low carbed 18 months ago, slipped and gained back a lot of weight and am now low carbing again. This time round it's definitely easier (also because of the experience I already built up)
I keep remembering what a friend (low carbing all the way back from obesity) told me: "just allow yourself an enormous freedom to eat". Which I have done: I strive not to end up above 20 grams carbohydrate daily, which should put me in ketosis. My main aim is lowering my insulin level, which does wonders because I did suffer from hypoglykaemia a lot. And now I don't. I agree that finding stuff to eat is difficult but I'd say: try to get your hands on the most extensive list of foodstuffs and their carb count. I figure: as long as I don't go over the 20 grms, I'm fine, so within that zone I allow myself a little freedom. But so far, 3 months of low carbing and not yet slipped (touch wood) Keep it up guys!!!
oh, and drink at least 2 liters of water a day, preferably more.
