Fat is very satisfying, so by eating some good dietary fats in your meal you will find that you aren't so hungry. Carbs on the other hand tend to MAKE you hungry. They increase your blood sugar, spike your insulin which brings the blood sugar way down, and that makes you hungry again.

Fat is calorie dense, but neutral as far as blood sugar reactions. Limiting carbs cuts out a LOT of the foods you are able to eat. Protein has a self limiting quality to it. A good steak is wonderful, but you know when you've had enough. Fat is the only other type of food out there. You MUST learn to be unafraid of it.

This doesn't mean that you must go overboard and eat tubs of lard or anything (as if anyone would). Just don't limit it so extremely that there isn't anything else to eat. I generally get most of my fat in the form of cream cheese or cream. Sometimes olive oil or bacon grease. The bacon grease I use on my spinach salad, with balsamic vinegar it is wonderful. But I don't use that much of it.

Olive oil is one of the healthiest fats you can eat. Actually LOWERS the bad cholesterol and increases the good. Fats to avoid are trans fats. Like margarine. Use real butter instead.

On this diet because you are cutting out the carbs your cholesterol levels should be good anyway. If you are worried about it, you should go to the doctor and have him test your blood before you begin the diet and then later maybe three months into the diet check your cholesterol levels again. Don't do it right after starting the diet, you might be slightly up at first. Give your body time to get into the rhythm of low carbing first.
