Subject: I don't think that fiber "absorbs carbs" I think the idea is that when foods are measured they measure the protein and fat content and what is left is assumed to be carbs. The part that is fiber doesn't cause blood sugar to raise but passes on through you, so you can subtract the fiber from the carb count.
