Chili

8 to 10 servings

2 tablespoons vegetable oil
2 - 2 1/2 pounds ground beef
1 1/2 - 2 pounds chuck roast, cut into cubes
2-3 tablespoons Worcestershire Sauce
Salt & Pepper
1 large onion, chopped
4 cloves garlic, chopped
3 tablespoons chili powder
3 tablespoons ground cumin
1 tablespoon dried oregano
1 tablespoon garlic powder
1 tablespoon Mexican hot chili powder
1 teaspoon black pepper
1/2 -1 teaspoon Cayenne
1—12 ounce bottle of beer
4 cups beef broth
1 large can tomato puree
2 tablespoons sugar
1 large can (2lb 8oz) light red kidney beans
1 large can (2lb 8oz) dark red kidney beans
1 bag tortilla chips, optional
Cooked rice, optional
3 cups grated Monterey Jack cheese
12 tablespoons sour cream
1 small jar jalapeños

In a large Dutch oven, heat the vegetable oil. When the oil is hot, add the ground beef, chuck roast cubes, season with salt, and pepper. Brown the meat for 5 to 6 minutes. When ground meat is cooked, add onions, garlic, Worcestershire sauce, chili powders, cumin, garlic powder, oregano, pepper, and cayenne; sauté for 3 to 5 minutes, or until the vegetables start to wilt. Drain off fat. Add bottle of beer and simmer for 10 minutes. Stir in beef broth, tomato puree, and sugar. Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, partially covered for 1 1/2 hours, stirring occasionally, or until the beef is tender.

Add the beans, and continue to cook for 30 minutes. Re-season with salt and cayenne. Place a handful of the chips in each shallow bowl. Spoon the chili over the chips or rice. Garnish with the grated cheese, sour cream and jalapeños.
