I had exactly the same problem with my rudder slamming hard over on TRAPEZE. My first trip to pick the boat up single handed resulted in various 360 degree pirouets whenever I let go the tiller. Even under power this happened and even in neutral with just 1 knot of way on - I thought I had bought a pup.
Godfrey Whitehouse (FOSTER) advised play around with the fore and aft rake but it seems all this does is increase or decrease weather helm. I think its because the system was originally for a lightweight foam rudder with a very thin skin of GRP. Mine is solid timber and quite heavy to raise & lower. I think the rake in the pivot points and the centre of gravity position makes the rudder topple and go hard over. I have rigged A 1/2" braided rope with a slip not round the tiller to chke onto it 12" from the end. The line goes port to the spinnaker turning block then starboard to the other turning block then clove hitch round the tiller. It has enough friction to maintain its position, can be set slightly slack to give more feel and a bit of weather helm or can be tightened by sliding the chocker aft along the tiller.
Negatives - I cannot set the spinnaker and the rope is starting to wear the gel coat on the cockpit coaming.
Positives - I can go below to raise lower the keel under power (winch system). I can sit out on the side deck and the boat sails itself with an occasional tweak on one or other of the rope legs to correct the course.
I have sailed straight and true for 20 minutes without touching the tiller - possibly dangerous as if I go overboard bye bye boat & bye bye me !
