Subject: processed foods

i have been on the atkins diet for a little while now, i have read his book front to back and it made a lot of sense to me. but i was too clear on a few things and i thought i would get someone elses opinions who have been successful with it. now my question is i usually eat hot dogs(no-fillers), sausages, and prepared hamburger patties. the hot dogs have under 1 carb per hot dog, and sausages about the same, and the patties have o carbs. but i remember reading that nitrates in processed foods may hinder a low-carb diet. now is that true and should i stay away from them.
