If this is the "Wedge tore out of the Death Star" quote, I'm going to scream! That has been shown to be wrong wrong WRONG so many times it's just not funny anymore. If you're not refering to that quote, please excuse my rant! :)
In the films, the fighters generally showed very low speeds in combat. Luke, stated to be at full speed, took minutes to traverse the DS trench which was at most (being very generous) a hundred km long. The scene from ANH where the Falcon chases the TIE at full speed shows very low speeds and accelerations. The only exception to this was the Yavin's moon to Death Star X-Wing example, but that was a straight line run, not combat (and is beaten by Trek speed and acceleration anyway!)

Not really. Trek targeting systems are well up to the task of hitting them. A single phaser hit would destroy them.
We saw in the DS trench run, that even a low speed impact with another TIE was enough to cause catastrophic damage, so even a proximity blast from a photon detonation would take them out. Unshielded TIE fighter would die in droves, and it would be very unlikely that any would get to attack range. At best they would distract the Dominion gunners from the capital ships for a few salvos.

True there's a lot of firepower there, but they have to hit. The Dominion have (with warp) a tactical speed advantage that would make them very difficult to hit. Apart from the battleship, all Dominion ships are very agile, and so would make difficult targets.
The Dominion ships have shown themselves to be pretty tough and absolutely ruthless (they will ram if the think it will help), and there will be more than 78 ships per Imperial ship.
