I've replaced my cutlass bearing a few times now. I usually remove the prop shaft & then bash out the bearing with a suitably shaped piece of wood or failing that a piece of suitably sized pipe. This is after removing the grub screw in the "P" bracket-(you mentioned the stern tube - I assume you mean the "P" bracket)
If you think yours has disappeared, this should make the job easier! It should be a fairly simple job to replace it, once you have found out what thread it is (try various screws until you find one that fits). I think mine is a small M4 s/s bolt.
