I'm no single handed sailor, but I would say that in its standard form the 500/501 wouldn't lend itself to it, but I know a number of people who do sail single handed so it's not the boat but the kit.

Standard layout doesn't have self tailing winches, and reefing is by rolling boom carried out at the mast.

There is no reason why you can't have self tailers and slab reefing, and I've always found that with the sails trimmed correctly the autohelm makes a pretty good job of being a spare pair of hands.

It could cost a bit to upgrade though, so try and get as much of it as you can with the boat.
