Sauce for French Toast -- Pep, 01:03:55 11/13/05 Sun (24-116-81-223.cpe.cableone.net/24.116.81.223)

APPLE CRANBERRY SAUCE:
1 1/2 cups cranberry juice
2 tablespoons cornstarch
1 tablespoon brown sugar
APPLE CRANBERRY SAUCE:
1 1/2 cups cranberry juice
2 tablespoons cornstarch
1 tablespoon brown sugar
1 teaspoon grated orange peel
1/8 teaspoon ground cinnamon
1 medium tart apple -- peeled and finely
chopped

Place half of the bread in a greased 13-in. x 9-in. x 2-in. baking dish; top each with a slice of ham, turkey, two to three apple slices and a piece of cheese (cut or fold meat and cheese to fit). Top with remaining bread. In a bowl, beat eggs, milk and nutmeg; pour over bread. Cover and refrigerate 6 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 30 minutes or until a knife inserted near the center comes out clean. Let stand for
10 minutes. Meanwhile, in a saucepan, combine the first five sauce ingredients; cook and stir over medium heat until thickened. Cook and stir 2 minutes longer. Stir in apple. Serve warm over French toast. Yield: 12 servings.

Since you make it ahead, this dish is wonderful for brunch. The slightly tart sauce pairs nicely with ham, turkey and cheese.

Night Before French Toast Casserole
(This is sometimes called "Lost Bread" but it is really good and easy to make)

1 thin loaf french bread -- cut into 1 inch long slices
8 large eggs
3 cups milk
4 teaspoons sugar
1/3 teaspoon salt
1 tablespoon vanilla

Grease 9 x 13 baking pan with butter. Arrange bread slices in one layer in pan. Beat remaininig ingredients and pour over bread.

Cover and refrigerate overnight.

To bake: Preheat oven to 350F. Remove cover, dot with butter. sprinkle with cinnamon and sugar.

Bake in preheated oven 350 for 45-50 mintues or until bread is bubbly and lightly browned. Remove from oven and let stand for 5 minutes.

Serving Ideas : Serve with syrup, yogurt or sour cream and fresh fruit.

Praline French Toast

Serving Size : 4
8 eggs OR egg beaters to equal
1 1/2 Cups half and half OR skim milk
3/4 Cu + 1 T. brown sugar
2 Teaspoons vanilla
8 Slices French bread, 3/4" thick to cover bottom
1/2 Cup margarine
1/2 Cup pancake syrup, maple recommended
3/4 Cup chopped pecans

Blend eggs, Half 'n Half, 1 T. brown sugar and the vanilla. Pour half
of the mixgture into 9x13" pan. Put the bread slices on top to cover the
bottom of pan. Spread rest of the mixture over the bread and cover and
refrigerate overnight to soak up well.
In another 9x13" glass or Corningware pan (either at the same time or
the next morning) melt the margarine, 3/4 c. of brown sugar, syrup and the
nuts. Cover with foil if overnight or use fresh if in the AM. Place the
soaked bread on top of nut muxture and bake at 350'F. for 30-35 minutes
until puffed and browned.
This is fantastic! You will only eat 2 pieces each. DON"T overcook or will carmelize the bottom and be hard to get out of pan. Use glass or Corningware as metal pans carmalize too quickly. Can brown slightly under
broiler if you want to, but not necessary.

RED, WHITE, AND BLUE FRENCH TOAST

1 cup fresh raspberries
1 cup coarsely chopped fresh red plums
1 cup fresh blueberries
2 tbs sugar
1 1/2 cups frozen egg substitute -- thawed
1 cup skim milk
1/4 cup plus 2 tbs sifted powdered sugar -- divided
1 1/4 tsp ground cinnamon
1 1/4 tsp vanilla extract
10 slices whole wheat bread -- (1oz)
Vegetable cooking spray

Combine first 4 ingredients in a medium bowl; toss gently. Cover and chill thoroughly. Combine egg substitute, milk, 1/4 cup powdered sugar, cinnamon, and vanilla in a shallow bowl, beating well. Dip each slice of bread, 1 at a time, in egg mixture, coating well. Coat a large nonstick
skillet with cooking spray; place over medium heat until hot. Arrange 2 to 4 bread slices in skillet and cook 4 to 5 minutes on each side or until browned. Repeat procedure with remaining bread slices. Sprinkle remaining 2 tbs powdered sugar evenly over toast; top evenly with fruit mixture.
Serves 10.

Baked Banana-Stuffed French Toast

Recipe By :Bon Appétit, November 1997
Serving Size : 4
4 ripe bananas, peeled, each cut into -- 4 pieces
8 thin slices light mixed-grain bread -- (reduced fat)
1/2 cup non fat milk
2 large eggs
1 teaspoon vanilla extract
pinch ground cinnamon
nonstick vegetable oil spray
powdered sugar
8 large strawberries
pure maple syrup (optional)


Preheat oven to 350°F. Place 4 pieces of banana on each of 4 bread slices; mash banana on bread. Top with remaining 4 bread slices. Whisk milk, eggs, vanilla extract and cinnamon in glass pie dish. Working in batches, dip bread in egg mixture; let soak 45 seconds on each side.

Spray large nonstick skillet with vegetable oil spray. Heat over medium heat.
Working in batches, add French toast to skillet and cook until golden, about 2 minutes per side. Transfer to baking sheet; bake 8 minutes. Transfer to plates.
Dust with powdered sugar. Garnish with strawberries. Serve with maple syrup, if desired.

Serves 4.


NOTES : A suggested alternative to the eggs, milk, etc. dip, is to substitute spiked eggnog. I have done this with left over eggnog from the night before, and it is good.

1 loaf of french bread cut in 8 slices. -- (Slice again

One 8 ounce package cream cheese
1/2 cup pecans
powdered sugar
1 cup whipping cream
4 eggs
1 teaspoon nutmeg
1 teaspoon vanilla

Mix the cream cheese with the pecans and a couple tablespoons of the powdered
sugar. Stuff the pocket you have created in the french bread with the cream
cheese mixture. Dip in the mixture of whipping cream, eggs, nutmeg, and
vanilla. Grill on hot griddle and serve with apricot sauce. The apricot sauce
can be prepared by mixing a 12 ounce jar of apricot preserves with a 1/2 cup
of orange juice, then heating the mixture.

Girls that pumpkin dip is wonderful. My
DIL makes it WHEN she comes over. She serves it with a very thin gingerbread wafer/cookie. I recipe goes a long way.

BTW it has been soup and cornbread weather here the past few days. Right now it is 51 degrees at 10.00 am. Tuesday I made a big pot of chili and it was sooooooooooooooooooo good.

Well Wilma passed us by but Cancun and Florida got hit really hard. Poor Florida, they just can't seem to get back on their feet with all these hurricanes -

12 thin slices ham
1 pound Monterey Jack cheese -- cut into 1/2-inch
strips
1 can whole green chiles -- cut into 1/4-inch
strips
12 flour tortillas
INGREDIENTS for Cheese Sauce:
1/4 pound butter
1/2 cup flour
1 quart milk
3/4 pound Cheddar cheese -- grated
1 teaspoon prepared mustard
1/2 teaspoon salt
1 Dash pepper
Paprika


1. Divide ham, cheese and chile strips among tortillas.
Place on top of tortillas; roll and secure, if necessary, with a toothpick.
2. Place tortilla rolls into a lightly greased 9x13-inch baking dish, separating them slightly.
3. Preheat oven to 350 degrees.
4. Prepare Cheese Sauce: Melt butter in a saucepan. Blend in flour and cook, stirring, for a few minutes.
5. Add milk slowly, stirring constantly to avoid lumps, then add cheese, mustard, salt and pepper. Stir until smooth.
6. Pour Cheese Sauce over tortillas and sprinkle with paprika. Bake for 45 minutes.

A recipe from my friend, Sharon...tis the season!


Pumpkin Dip

This is the original recipe. Comments to follow:
2 cups powdered sugar
2 - 8 oz. Blocks Philly cheese
Cream until smooth

1 large can Pumpkin
1 tsp. cinnamon or pumpkin pie spice
to taste, either will work.
Whip all together and dip with sugar cookies, cinnamon grahams, or what you can think of. Ginger snaps are good too or vanilla wafers. Just a plain cookie, not sweet. I used the cinnamon grahams. Whin I made it, I started with 1 cup of powdered sugar. And then only added about 1/8 of a cup more of sugar. Sweet, but yummy and something different. Really think one cup of powder sugar will be enough. (If you half the recipe cut the powdered sugar to 3/4 cup. Tastes like pie filling... Enjoy !

Hey, L.O.L.! Carl DOES wear 'leathers', but only in the winter! HA! It's WAAAAAAYYYYY too hot here to wear them the rest of the year! I even have some for when we take little day trips up to the high country in the cooler time of the year! When I'm on the back of his bike, I like to look around at the scenery and the critters and all, so having my own bike isn't an option for me! I'm too busy having fun...SOMEBODY has to pay attention! LOL!

Judy...it's been cool here at night and in the AM...then it warms up to the 80's during the day. It's pretty nice! I wish it would get to be 'soup and cornbread' weather here though...I'm getting hungry for soup!

Pep! Stay clear of Wilma!! I hope it fizzles (sp) out before it does damage!!

Judy...my niece does a similar corn dip only she doesn't use mayo. Hers is cream cheese, corn, a whole jar of sliced jalapenos and maybe something else...I can't remember. She heats all these things in the microwave and serves it with Fritos! Love it!

INGREDIENTS:

3 large ripe firm Bartlett pears, peeled, cored
and split lengthwise
2 Tablespoons brown sugar
2 Tablespoons dark rum
1/2 teaspoon lemon juice
1 Tablespoon unsalted butter
13 square caramels
1 teaspoon dark rum
Cooking juices from pears
Vanilla ice cream

TO PREPARE:

1. Preheat oven to 400 degrees. In an 8-inch square
baking pan, arrange pears, cut side down with tops
pointing toward center. Set aside.
2. Combine brown sugar, 2 Tablespoons rum, lemon juice and
butter in microwaveable dish. Heat on high in
microwave until butter is melted, about 30 seconds.
Brush mixture over pears.
3. Bake, uncovered, until pears are just tender, 20-25
minutes, brushing with pan juices 2 times during
baking. Reserve pan juices. (Pears can be baked 1 day
ahead, covered and refrigerated; let come to room
temperature before reheating.)
4. Melt caramels with 1 teaspoon rum and pan juices in
deep microwaveable dish on medium (50 percent power)
in microwave for 1 – 1-1/2 minutes, stirring twice.
Watch carefully to avoid scorching. Stir until smooth.
5. Cut pear halves lengthwise into quarters. Pour sauce
evenly over pears. Bake uncovered at 300 degrees until
heated through, about 12 minutes. Spoon caramel sauce
over pears once during reheating.
6. To serve, arrange 3 pear quarters in individual dessert
dishes. Top with scoops of vanilla ice cream. Spoon
caramel sauce over ice cream.

SERVES: 4

Slow-Cooked Rosemary Beef and Tomatoes over Noodles


Makes: 4 servings

Slow-cook herbed beef stew meat in an elegant dish served over noodles.

2 tablespoons margarine or butter, melted
1 medium onion, chopped
1 teaspoon beef base
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 lb beef stew meat, cut into 1 1/2-inch cubes
4 1/2 cups uncooked wide egg noodles (8 oz)
4 plum (Roma) tomatoes, chopped
1 tablespoon chopped fresh rosemary leaves


1. In 4- to 6-quart slow cooker, mix margarine, onion, beef base, salt, pepper and beef.
2. Cover; cook on Low setting 9 to 10 hours.
3. About 15 minutes before serving, cook and drain noodles as directed on package. Meanwhile, add tomatoes and rosemary to beef mixture; mix well. Increase heat setting to High; cover and cook 10 minutes longer. Serve beef mixture over noodles.

I'm sure I've posted this at some time, but it's almost soup and cornbread time. Also, I was in here printing it for a co-worker. It's 58 here right now, but it was cooler a couple of days ago. It warms up though. We are about to go riding on the Harley:)


BROCCOLI CORNBREAD

2 pkg. yellow cornbread mix
2 sticks margarine or butter, melted
12 oz. small curd cottage cheese
4 eggs
7 oz. chopped green chilies
10 oz. frozen chopped broccoli, thawed

Mix margarine, cottage cheese, eggs, green chilies, and broccoli with cornbread mix.
Pour into hot pan (9x12) sprayed with Pam. Bake at 350° for 35-40 min. or until brown on top.

I got this where I work out. It came from "Light and Tasty" magazine. I didn't freeze it since it has cream cheese and sets well. I baked pecan pies yesterday and put one in the freezer. Since it's almost time to have pecans again, I thought I'd use some I have in the freezer!

FROSTY LEMONADE PIE

1 (8oz) fat-free cream cheese
1 tub sugar-free lemonade soft drink miz (Crystal Light)
1 cup cold fat-free milk
1 package (1 oz) sugar-free instant vanilla pudding mix
1 carton (8 oz) frozen fat-free whipped topping, thawed
10 sugar-free lemon sandwich cookies, crushed
1 reduced fat graham cracker crust (8 in)

In a small mixing bowl, beat cream cheese and drink mix until smooth. In a bowl, whisk milk and pudding mix for 1 1/2 min. Mixture will be thick. Beat into cream cheese mixture. Beat in a third of the whipped topping. Fold in remaining whipped topping.

Set aside 3 tablespoons cookie crumbs. Fold remaining crumbs into cream cheese mixture. Spoon into crust. Sprinkle with reserved crumbs. Cover and freeze for 4-5 hours or until firm. Remove from the freezer 45 min. before serving. Serves 8.

1 piece=251 cal., 6 g. fat, 2 g. saturated fat, 3 mg. cholesterol, 457 sodium, 40 g. carbohydrates, 1 g. fiber, 7 g. protein
Diabetic Exchange: 2 1/2 starches, 1 fat

Hi all

L.O.L. - yes I am glad you got to see our beloved Coast BEFORE because the AFTER won't ever be the same. So many of our great landmarks and treasures are gone. However, the Lighthouse still stands as a beacon of hope that we will rebuild once again. I did hear today that all of George Ohr's pottery that was housed at the Ohr Museum was safe in Jackson, Ms. They have been remodeling/rebuilding the Museum so all the artifacts had been moved way prior to the hurricane.

Annie, Yes they are going to rebuild the Casinos so I will have a Hurricane gauge once again. Gosh but Dot and I are saving bundles of money these days....we may have to get a new hobby.

Pat M - I read that you lost all your recipes stored on your hard drive. If there is anything you particularly want, I probably have it stored somewhere. Ha

Blue Cornbread Madeleines

Easy and Distinctive Recipes for a Vibrant Lifestyle

INGREDIENTS:

1 cup all purpose flour
1 cup blue cornmeal (yellow may be substituted)
1 Tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
6 Tablespoons butter, melted
1/4 cup honey
1/4 cup corn kernels, canned, drained
1/4 cup chopped fresh cilantro

TO PREPARE:

1. Preheat oven to 425 degrees. Stir together flour,
cornmeal, baking powder and salt.
2. In a small bowl, beat the eggs. Whisk in the milk,
butter and honey. Gently stir in corn and cilantro.
3. Make a well in the dry ingredients and pour in the
egg-milk mixture. Stir just until well blended.
Spoon batter into well buttered and floured madeleine
pans, filling each shell 3/4 full.
4. Bake for about 6 minutes. Invert pan over wire rack
and tap to release madeleines. Serve warm.

NOTE: These are particularly good with a Mexican brunch or
dinner. They can also be made in miniature muffin
tins.

Glad to hear you're back in your home and in relatively good shape. We just cannot believe the devastation in your part of the world ..... I remember travelling all through that area and enjoying it so much ........ guess its a good thing I had that trip then 'cuz I doubt I'll live long enough to see it rebuilt like it was. Its going to take a very long time I think. What on earth happened with all the *above ground* cemeteries ? Did they float away? Oh God, how awful for the families who had people there.

Not to frighten you, but I did hear on the radio the other day that some meterologist types are saying that there is a third hurricane building - didn't say when or where it could land but they did say it will be as bad, if not worse than either Katrina or Rita ..... I pray they are wrong !!

We had heavy rain and mixed snow today ....... IT'S NOT TIME FOR SNOW YET !!!!!! ... lol! - and now we're under a heavy snowfall warning for overnight ...... the world's weather is just going nuts !!!

Hi All,
Just got my internet back this afternoon and I am one happy camper. Now maybe my life will get back to normal or at least a sembalance of order. This place is just utter devastation once I get out of my little quiet neighborhood.

Thanks to all of you for your good thoughts and prayers. I just feel so blessed that we only suffered a little inconvenience and discomfort when I look around at all the people who have lost everything. 4 of my very best friends lost all their furniture with 4 to 7 feet of water. 1 of them not only lost all her furniture but her house as well...she had just moved in the week before Katrina - now there is nothing left but the brick retaining wall around the pilings........$2 million dollar house just gone..

They say we will not be able to eat anything from the surrounding waters for at least 2 years ... no shrimp, no fish, no oysters..........

Casinos are all gone....NO, L.O.L. I wasn't in one gambling but I might have been had one been open. Ha.... I always judge how bad a hurricane will be by when they close the casinos. Katrina got all of Mississippi's and Rita got the rest of Louisiana's.......Is God telling us something????

Garlic and Pepper Marinated Flank Steak

1/4 cup soy sauce
2 tablespoons olive oil
5 large garlic cloves, pressed
1 teaspoon cracked black pepper
1 large flank steak (about 2 pounds)

Combine first 4 ingredients in shallow baking dish. Add steak and turn to coat with marinade. Cover and refrigerate 3 to 6 hours.

Prepare barbecue (high heat) or preheat broiler. Season steak generously with additional pepper. Grill or broil steak to desired doneness, brushing occasionally with marinade, about 4 minutes per side for medium rare. thinly slice steak across grain and serve.

Serves 4.

Pat’s notes: Per the reviews, added juice of 1/2 lime. Marinated 3 hours. Very tasty and the meat was quite tender for flank steak. Will definitely make again. Was nice with grilled asparagus and spinach salad with pear, avocado and gorgonzola.

Annie, the job is going well. Working in a fine-dining restaurant kitchen is fascinating. Going into my 4th month now and enjoying many elements. The people I work with are all very nice, from the executive chef to the sous chefs, prep cooks, dishwashers, and of course my boss, the head pastry chef. The owners are wonderful too. I'm sure learning a alot. Thanks for asking.

I haven't made this, but my friend Harriett made it for friends. They all liked it.

OATS AND GRANOLA PIE

INGREDIENTS
Crust
* 1 Pillsbury refrigerated pie crust (from 15-oz box), softened as directed on box.
Filling
* 1/2 cup butter or margarine
* 1/2 cup packed brown sugar
* 3/4 cup corn syrup
* 1/8 teaspoon salt
* 1 teaspoon vanilla
* 3 eggs, lightly beaten
* 4 Nature Valley Oats 'n Honey crunchy granola bars (2 pouches) crushed. To easily crush granola bars,
do not unwrap. Use rolling pin to crush bars.
* 1/2 cup chopped walnuts
* 1/4 cup quick-cooking or old-fashioned oats
* 1/4 cup chocolate chips
* Whipped cream, Cool Whip, or ice cream, if desired

Heat oven to 350 degrees F.

Place piecrust in 9-inch glass pie pan as directed on box for One-Crust Filled Pie.

In large microwavable bowl, microwave butter on high 50 to 60 seconds or until melted.

Stir in brown sugar and corn syrup until blended. Beat in salt, vanilla and eggs.

Stir crushed granola bars, walnuts, oats and chocolate chips into brown sugar mixture. Pour into crust-lined pan.

Bake 40 to 50 minutes or until filling is set and crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil or pie shield to prevent excessive browning.

We're going out there for a bbq on October 1st and it will be great to see them! We talk on the phone and of course, still email! Cole, her oldest, is graduating from HS this year! Is that hard to believe???? The twins are 13 and in Jr. Hi. It just blows me away to think she has grown kiddos!!!

Cowboy Caviar

Great as a dip for tortilla chips, as a filling for tortillas or
tostadas, or just as a side salad.

2 tbs.. red wine vinegar
1-1/2 tbs. salad oil
1 tsp. Tabasco
3/4 tbs. chopped garlic
1 avocado, diced (omit, if desired...I always use avocado)
1 can black beans, rinsed and drained, or black-eyed peas
1 can whole kernel corn, drained
2/3 cup chopped green onions
1 bunch cilantro (I use about 1/4 cup chopped)
3 or 4 Roma tomatoes, seeded and diced
salt and pepper to taste

Combine first 4 ingredients. Add remaining ingredients except avocado and mix well. Add avocado just before serving. Chill. Can be made several hours or a day ahead.

Some great news - My house has power and is cooling even as I type. Hopefully that little "good fairy" that spent the night down there last night is cleaning out my refrigerator and freezer and washing that dishwasher load of dishes I left.....

We won't be going home for a while due to the food situation. Bettr for us to be up here than down there worrying Tanya to death. She is so afraid Kirk or I will have a heart attack over all of this. She has enough to take care of.

Anyway thanks to all of you for your thoughts and prayers and I am so grateful that the man upstairs decided to spare my family and friends.

Will be checking back before we leave the area because once I reach Miss. we may still not have phone or cable/internet service.

Thanks Gals but I am OK....

We fared really well during the big blow and I do me big.
Lost some shingles, lots of limbs and pinecones but no Real damage except I was a little frightened. Not a lot because I was steady taking my Prozac.

It was the Heat that finally got me. Tuesday night Ms Maddie, Daisy and I slept in the car with the AC running. I decided then my fat ole body was gonna melt if I didn't get the heck out of dodge. Daisy and Ms Maddie said, "yes MOM get us to some where cool." We left around 11:00 headed North; arrived here in Del. last evening and I was finally able to get on the internet for a little while just to let a few people know I was still alive and kicking.

We will stay away till the power is restored which may be as long as 2 months. Sure hate to be gone that long but I am not gonna suffer that heat and deprivation if I don't have to.

All my family fared very well and are all doing great. Tanya and Randy have gone to Tex. to take Pam and Kids some clothes and things and to bring back water and gasoline for the generators. Randy drove in from Va. on Tuesday bring a boat load of water and gasoline . Tanya's neighbors were all happy to see that come in and they were happy to see me leave because I cleaned out my freezer and they all had a big cook out. I even had cooked gumbo frozen in there so I was glad to know it didn't go to waste. I brought my shrimp and crabmeat up here and we are going to make gumbo tomorrow.

Will check in from time to time.

Fried Oreos

Submitted by Jan Wilkens of AZ.

1-1/4 C. All-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
1 Large egg
3/4 C. Milk
Vegetable oil for frying
20- -25 Oreo Cookies
Confectioners' sugar, for garnish

Combine flour, baking powder, & salt in large bowl, set aside. In small bowl, whisk together egg and milk. Combine the milk mixture with the flour mixture, stirring just until well blended. In a medium, heavy-bottomed saucepan, add enough oil to come 1/3 of the way up the sides of the pan, or about 1-1/2" deep. Heat the oil to 360-degrees. Dip cookies in batter & carefully place in hot oil (I recommend using a slotted spoon). Fry until batter is golden, about 2 minutes. Turn cookies & fry for approximately 1 minute more. Remove & place cookies on a paper towel-lined plate. Dust with confectioners' sugar and serve immediately.
